Cruising in the Caribbean!!

Hi Dolls,

Cruising, cruising, and cruising!!! Every year for the past 4 years, I have taken a cruise with family and friends. I have had the opportunity to island hop, swim with dolphins, go cave tubing, walk on white sandy beaches, snorkel and scuba dive in the ocean, eat various foods from different cultures and the list goes on and on. On every adventure I take a picture, so I can have those memories stay with me. Here are some photos from my cruises! Enjoy.

Sunday Brunch: Bourbon French Toast & Banana Bourbon Syrup!!

Hi Dolls,

It's Christmas weekend and for most of us family is still here. So, I woke up and decided to make French Toast with Banana Bourbon Syrup. Check out the recipe below:









It's Cocktail Hour Somewhere Bourbon French Toast

Ingredients:
3 large eggs
1/2 cup milk
1 tablespoon bourbon (I used Maker's Mark Kentucky Straight Bourbon Whisky)
Grated zest of 1 orange or 1 teaspoon orange juice
1/2 cup all-purpose flour 
1/8 teaspoon ground cinnamon
Pinch of ground nutmeg
1 teaspoon butter
4 1-inch-thick slices brioche, Challah, French bread or white bread (Challah is the best, but the supermarket was out for the holiday weekend)
Sliced Strawberries - optional (Bananas or the fruit of your choice)
A few fresh mint leaves - optional

1. In a shallow bowl or pie plate, whisk the eggs, milk, bourbon, orange zest, flour, cinnamon, and nutmeg until thoroughly combined. (For the holiday, I replaced the eggs, milk, cinnamon and nutmeg with eggnog. You may also substitute milk with heavy cream.)

2. In a large griddle or skillet, melt the butter over moderate heat, tilting to coat the griddle.

3. Dip the bread, one slice at a time, into the egg mixture, turning to coat both sides and giving each side a few seconds to soak. Transfer the slices to the griddle.

4. Cook the bread over moderate heat, until golden and slightly crisp, about 2 or 3 minutes on each side. Add more butter as needed to prevent bread from sticking.

Bourbon Syrup

1/3 cup maple syrup
1 tablespoon bourbon ( you can also use a cap full)
1 tablespoon butter 

1 teaspoon vanilla
2 tablespoons brown sugar
1 medium to large banana sliced

5. Meanwhile, make the bourbon syrup. In a small saucepan combine the maple syrup, bourbon, and butter. Cook over moderately low heat until the butter is melted, about 3 minutes. (At this step, also add the vanilla, brown sugar and bananas.)

6. Arrange the French toast on the plates. Pour the syrup over, garnish with strawberries and mint leaves (if using) and serve.

Rum Up Your Holiday: Rum Spiked Eggnog Cupcakes

Hi Dolls:

Tis the season for family gatherings, laughter, love and making memories. Food plays a special part in my family and this holiday I baked Rum Spiked Eggnog Cupcakes with Rum Buttercream Icing. Check out my parts 1 and 2 of my video below and the recipe to follow.

Rum Up Your Holiday: Rum Spiked Eggnog Cupcakes Part 2



Eggnog Cupcakes
Yield: about 18 cupcakes

INGREDIENTS

For the cupcakes:
  • 1 1/3 cups all-purpose flour
  • ¼ tsp. baking soda
  • ½ tsp. baking powder
  • ½ tsp. salt
  • ¼ tsp. freshly ground nutmeg
  • ¼ cup dark rum or bourbon (optional)
  • 1 cup eggnog
  • ¼ cup vegetable or canola oil
  • 1 tbsp. apple cider vinegar
  • 1 tsp. vanilla extract
  • 1 cup sugar
For the frosting:
  • 20 tbsp. unsalted butter, at room temperature (2 1/2 sticks of butter)
  • 2½ cups confectioners’ sugar, sifted
  • Pinch of salt
  • Pinch of freshly grated nutmeg
  • 2½ tbsp. eggnog
  • 1 tbsp. dark rum (0ptional)
For garnish:
  • Ground cinnamon or grated nutmeg
  • Cinnamon sticks

DIRECTIONS

  • To make the cupcakes, preheat the oven to 350˚ F.  Line cupcake pans with paper liners.  In a medium bowl, combine the flour, baking soda, baking powder, salt and nutmeg; whisk to combine.  In the bowl of an electric mixer, combine the rum, eggnog, vegetable oil, vinegar, and sugar.  Beat on medium-low speed until well blended.  Add in the dry ingredients and mix on low speed just until incorporated.
  • Divide the batter between the prepared cupcake liners, filling the cups 2/3 full.  Bake 22-24 minutes, or until a toothpick inserted in the center comes out clean.  Allow to cool in the pan 5 minutes, then transfer to a wire rack to cool completely.
  • To make the frosting, place the butter in the bowl of an electric mixer fitted with the whisk attachment.  Beat on medium-high speed until smooth, 20-30 seconds.  Add in the powdered sugar, salt and nutmeg, and mix on medium-high speed until incorporated and smooth, about 1 minute.  Scrape down the sides of the bowl.  Add in the eggnog and  whip on medium-high speed until light and fluffy, 4 minutes.  With the mixer on medium-low speed, blend in the rum.
  • Fill a pastry bag with the frosting and decorate the cooled cupcakes as desired. Sprinkle with ground cinnamon or grated nutmeg, and garnish with cinnamon sticks if desired.
